    Taste the future: Fermented plant-based foods made with biosolutions   In the latest edition of our biosolutions bulletin, we focus on how we can learn from plants and fermented plant-based foods. In the world of food innovation, fermented plant-based foods have recently come into the spotlight. From leading a quiet life on the sidelines of mainstream diets, the vegetal cuisine is now taking center stage, and many efforts are put into elevating its culinary appeal. For thousands of years, humans have been fermenting plant products like fruits, leaves, and roots to create a variety of foods and beverages. For example, wine from fermented grapes, bread from fermented dough, chocolates from fermented cocoa beans, miso from fermented red beans, or kimchi from fermented cabbage. Not to mention the coffee, tea and olives we love, without even thinking of it as fermented plant-based foods. However, it was only recently in the early 19th century that scientists discovered that microbes like bacteria and fungi cause fermentation. It took almost another hundred years for research in food science, biochemistry, microbiology and other fields to understand why certain foods taste, smell, or feel the way they do.     Biosolutions wage war on climate change: Crushing carbon emissions for a greener future A new article from our most recent edition of our biosolutions bulletin focuses on the role of biosolutions in enabling us all to contribute in the fight against climate change. While each of us contributes only a small amount, the cumulative impact of over eight billion people in the world is substantial. Over the past decades, there has been a gradual shift towards more environmentally friendly and sustainable production methods across various product categories, and biosolutions are part of driving that change.  "By integrating biosolutions into the production process, we reduce carbon emissions, making our choices and actions more sustainable and environmentally friendly," the article reads.     How biosolutions help feed the world In this video, our colleague Edward C. Rojas explains how biosolutions can be used to produce enough food for all of us. Edward is a Senior Scientist in our Plant Biosolutions Applied R&D team. "What our team does is understand how microbes and plants work together to find the best and most sustainable ways to get more food from our fields. By adding microbes to plants, it's possible to gain up to 10% more yield," he says. He also talks about the overall potential of biosolutions in agriculture: "This is just the beginning. By learning from microbiology, we can also reduce the use of fertilizer, reduce pollution of water and so much more."     How microbes craft cheese flavors Although humans have worked on mastering the art of cheese fermentation over thousands of years, researchers knew little about the microbial community interactions that occur as milk turns into cheese. A new article in the publication The Scientist describes a research project led by our colleague, bioengineer Ahmad Adel Zeidan, explaining how microbial interactions affect cheese flavor formations. The findings could be used for cheesemakers to finetune cheddar characteristics, for instance. The team chose cheddar cheese as a model system because its composition of 25 to 30 bacterial strains provided an intermediate level of microbial complexity to work with. They then assessed the effects of specific bacterial strains on cheese flavor by removing either a single strain or a group of strains from the starter culture. “This work advances the field by figuring out what needs to be done to make cheese taste the way we want it to taste,” said Maria Marco, a microbiologist at the University of California, Davis, who was not involved in the research. “It shows the complexity of microbial environments. We have a unique library of strains – both in size, complexity and accessibility.     "In order to continue to thrive, we must learn from nature."   In this video, we are joined by Professor Katherine Richardson, Sustainability Science Centre at the University of Copenhagen (Københavns Universitet), for a conversation about modern civilization and nature.    "Our challenge for modern civilization is to pretend we're nature and learn from nature, to have a 100% circular economy just as nature does, and to use the resources on this Earth as efficiently as possible," she says.     She also talks about whether people in more primitive societies live in better harmony with nature and what we can do to get inspired by nature for modern life.    "Even though scientists have tried for a very long time, we are not as smart as plants yet.     Celebrating and embracing inclusion and diversity ❤️     Over the past few weeks, our colleagues from around the world have marked the importance of diversity and inclusion by participating in local activities and events during Global Pride Month.     Among others, we used the opportunity to zoom in on active allyship in a global live interview session with Dr. Dr. Poornima Luthra (She/ Her), Associate Professor at Copenhagen Business School. Professor Luthra shared her perspective on what each and every one of us can do to nurture inclusive relationships with our colleagues and create an environment that values diversity.  At Novonesis, we believe that by embracing and respecting differences, fostering inclusion, and ensuring that everyone feels a sense of belonging, we are cultivating a truly inclusive and diverse workspace.
