SZECHWAN BEEF LO MEIN

- 1 Lb. Well trimmed boneless beef top sirloin steak, 1-inch thick shopping list
- 4 garlic cloves, minced shopping list
- 2 tsp. Minced fresh ginger shopping list
- ¾ tsp. red pepper flakes, divided shopping list
- 1 Tbs. vegetable oil shopping list
- 1 can ( about 14oz ) vegetable broth shopping list
- 1 cup water shopping list
- 2 Tbs. reduced-sodium soy sauce shopping list
- 1 pkg. ( 8oz ) frozen mixed vegetables for stir-fry shopping list
- 1 pkg. ( 9oz ) refrigerated angel hair pasta shopping list
- ¼ cup chopped cilantro ( optional ) shopping list
How to make it
- 1)Cut steak crosswise into 1/8 -inch strips; cut strips into 1 ½ -inch pieces. Toss steak with garlic, ginger and ½ tsp. Red pepper flakes.
- 2)Heat oil in a large non-stick skillet over medium-high heat. Add half of the steak; cook and stir 3 minutes or until meat is barely pink in the center. Remove from skillet; set aside Repeat with the remaining steak.
- 3)Add vegetable broth, water, soy sauce and remaining ¼ tsp. Of red pepper flakes to skillet; bring to a boil over high heat. Add vegetables; return to a boil. Reduce heat to low; simmer, covered 3 minutes or until vegetables are crisp-tender.
- 4)Uncover; stir in pasta. Return to a boil over high heat. Reduce heat to medium; simmer, uncovered, 2 minutes, separating pasta with two forks. Return steak and any accumulated juicesto skillet; simmer1 minute or until pasta is tender and steak is hot. Sprinkle with cilantro, if desired.
