GROUND TURKEY STUFFED EGGPLANT

- Ingredients: shopping list
- 1 ½ Lb. Of lean ground turkey shopping list
- 2 eggs shopping list
- 1 onion chopped shopping list
- 2 Tbs. Flaked parsley shopping list
- 1 cup seasoned bread crumbs shopping list
- 1/3 cup grated parmesan cheese shopping list
- ¼ cup chopped green bell pepper shopping list
- ¼ cup shredded cheddar cheese divided shopping list
- 2 Tbs. margarine or butter shopping list
- ½ tsp. salt shopping list
- ¼ tsp. pepper shopping list
- olive oil shopping list
- 6 small eggplants ( about 6 inches each ) shopping list
How to make it
- Preheat the oven at 375º
- Cut tops off about 1 ½ inches down, with a serrated edge spoon hollow out the center pulp of each eggplant leaving ½ inch thickness. Chop the pulp set aside.
- In a large skillet prepare the stuffing. Mix and sauté all the ingredient and the eggplant pulp for 15 minutes, till the turkey no longer is pink.
- Fill the 6 eggplants with the stuffing mixture and oil the out side. In a oiled Casserole dish place the stuffed eggplant. Sprinkle the remaining cheese on the top of each eggplant. If there is stuffing remaining pour into the casserole dish with the eggplant or use Italian tomato sauce around the eggplant. Bake at 375º for 45 or cooked through. Serve one eggplant to each guest and spoon sauce over each. Buon Appetito.
