How to make it

  • Melt margarine in an 8 - inch square pan or small round shallow casserole
  • Drain asparagus.
  • Reserve 1/2 cup liquid
  • Arrange asparagus in melted margarine.
  • Add chicken.
  • Sprinkle with cheese. Prepare muffin mix according to package directions.
  • Carefully spoon batter on top of cheese as evenly as possible.
  • Bake at 400 degrees for 30 minutes.
  • Combine 1/2 cup asparagus liquid with soup and lemon juice.
  • Stir until smooth.
  • Heat and garnish with chopped pimiento.
  • Serve as sauce for casserole.
