Irish Potato Chowder

- 1 T. butter shopping list
- 2 stalks celery, chopped shopping list
- 1 medium onion, chopped shopping list
- 3 cups double-strength chicken stock shopping list
- 6 large potatoes, cubed shopping list
- 2 carrots, peeled and sliced shopping list
- 3/4 t. seasoned salt shopping list
- 1/2 t. thyme leaves shopping list
- 1/2 t. rosemary, crushed shopping list
- 1/4 t. garlic powder shopping list
- 1/4 t. pepper shopping list
- 2 cups milk shopping list
- 1 cup shredded cheddar cheese shopping list
How to make it
- Melt butter in a large saucepan or soup pot over low heat.
- Add celery and onion and saute about 2 to 3 minutes until onion is transparent. Add chicken stock. Add all remaining ingredients except milk and cheese. Simmer about 2 to 30 minutes until vegetables are tender. Remove from heat. Mash vegetables wiht a potato masher. Add milk and cheese. Cook, stirring constantly, until cheese is melted.
