How to make it

  • Melt butter in a large saucepan or soup pot over low heat.
  • Add celery and onion and saute about 2 to 3 minutes until onion is transparent. Add chicken stock. Add all remaining ingredients except milk and cheese. Simmer about 2 to 30 minutes until vegetables are tender. Remove from heat. Mash vegetables wiht a potato masher. Add milk and cheese. Cook, stirring constantly, until cheese is melted.
