Apple Bacon and Spinach Salad

- 6 slices bacon, cooked crispy, drained - save 1/2 of the bacon drippings shopping list
- 1 bag of baby spinach, thoroughly washed & spun dry shopping list
- 1 honey crisp apple, cored and sliced into thin wedges shopping list
- 1/4 cup finely diced red onion shopping list
- 1/4 cup sliced fresh mushrooms (shitakes work great) shopping list
- 2 teas. Dijon mustard shopping list
- 2 Tbsp. red wine vinegar shopping list
- 2 Tbsp. honey shopping list
- 3 Tbsp. extra virgin olive oil shopping list
How to make it
- Rinse apple slices with a little water mixed with lemon juice to keep them from turning dark, drain. Combine apples, spinach and 4 slices of bacon, crumbled, in a salad bowl.
- In pan with reserved bacon drippings, turn to medium heat - when hot add onions and mushrooms, Cook until onion is barely tender. Remove from heat and add remaining 2 slices of bacon, crumbled. Stir to combine. Pour into a heatproof bowl. Add vinegar,Dijon mustard, honey and olive oil. Whisk to combine and lightly dress spinach-apple mixture. Toss and serve.
