Honey Pork Tenderloin Kabobs

- 1/2 c bourbon or 2 Tbs cider vinegar shopping list
- 1/2c c honey shopping list
- 1/2 c mustard shopping list
- 1 tsp dried tarragon shopping list
- 3-4 sweet potatoes cut into 24 1" cubes shopping list
- 11/2 lbs. pork tenderloin,cut into 24 1" cubes shopping list
- 4 med. ripe unpeeled peaches,pitted and quartered shopping list
- 4 green peppers,each cut into 8 2' pieces shopping list
- 8 yellow onions,each cut into 4 2" pieces shopping list
- olive oil for grilling shopping list
How to make it
- Mix first 4 ingredients in a bowl;stir well and set glaze aside. Steam or boil the sweet potatoes until crisp-tender. Thread 3 sweet potato cubes,3 pork cubes,2 peach quarters,four green pepper pieces and 4 onion pieces alternately onto each of 8 1o' skewers. Brush kabobs with honey glaze mixture. Lightly oil grill. Grill over med-hot coals 5 mins. on each side,basting occasionally with the glaze.
