Baked Red Onions

- 3 red onions halved shopping list
- Rind of 1 lemon cut into strips shopping list
- 1/4 cup olive oil shopping list
- 1/2 cup raisins shopping list
- 1/4 cup port wine shopping list
- 2 tablespoons cider vinegar shopping list
- 1/2 tablespoon paced brown sugar shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
How to make it
- In large saucepan cover onions and lemon rind with water then bring to boil and boil 5 minutes.
- Drain then rinse under cold running water and drain again then discard lemon rind.
- Peel onions and arrange in rectangular baking dish and pour olive oil over onions.
- Bake uncovered at 375 basting occasionally for 40 minutes.
- Add raisins, wine, vinegar, sugar and pepper then bake another 30 minutes
