How to make it

  • In large saucepan cover onions and lemon rind with water then bring to boil and boil 5 minutes.
  • Drain then rinse under cold running water and drain again then discard lemon rind.
  • Peel onions and arrange in rectangular baking dish and pour olive oil over onions.
  • Bake uncovered at 375 basting occasionally for 40 minutes.
  • Add raisins, wine, vinegar, sugar and pepper then bake another 30 minutes
