How to make it

  • If bread is fresh, slice and toast at 350 degrees for 10-20 minutes. If bread is a day or two old, slice and toast for 5-10 minutes.
  • Reduce oven temperature to 325.
  • Arrange bread slices in the bottom of a 7x11" casserole that has been lightly sprayed with no-stick spray, overlapping if necessary.
  • In a heavy skillet over medium-high heat, cook onions 4-5 minutes or until translucent. Add garlic and cook additional 1-2 minutes. Remove to a bowl, combine with cubed chicken, and set aside.
  • Add torn spinach to skillet with a 2-3 tablespoons of water. Saute spinach until wilted and most of water has cooked out.
  • Sprinkle 1/2 cup of cheddar over bread layer. Top with an even layer of cooked spinach, followed by an even layer of onion and chicken mixture. Finish layers with tomato slices, overlapping if necessary.
  • Whisk together milk, egg beaters, basil, thyme, and pepper. Slowly and evenly pour mixture over strata. Place casserole on a baking sheet and bake, uncovered, 35-40 minutes. To check for doneness, insert a knife into the center and see if it comes out clean. If strata isn't done, continue checking at 10 minute intervals.
  • When knife returns clean, top with remaining 1/2 cup cheddar and bake for an additional 5 minutes, or until cheese is melted.
  • Allow to cool 5-10 minutes before serving.
