Shrimp Pasta Salad

- 2-1/2 cups shell pasta cooked al dente then drained and cooled shopping list
- 1 red bell pepper seeded and diced shopping list
- 6 green onions including some tender green tops sliced shopping list
- 2 celery stalks sliced shopping list
- 2 avocados peeled pitted and cut into bite sized pieces shopping list
- 2 tablespoons lemon juice shopping list
- 1/2 pound cooked small bay shrimp shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- lettuce leaves for lining plates shopping list
- 3 hard cooked eggs quartered shopping list
- Creamy Italian Dressing: shopping list
- 1/4 cup extra virgin olive oil shopping list
- 1/2 cup mayonnaise shopping list
- 1/2 cup buttermilk shopping list
- 3 teaspoon fresh lemon juice shopping list
- 1/4 teaspoon dried basil crumbled shopping list
- 1/4 teaspoon dried rosemary crumbled shopping list
- 1/4 teaspoon dried oregano crumbled shopping list
- 1/4 teaspoon garlic powder shopping list
- 1/4 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- In bowl combine pasta, bell pepper, onion and celery then stir well.
- In separate bowl toss avocados with lemon juice and add to salad along with shrimp.
- Cover and refrigerate several hours.
- Combine all ingredients and whisk well until blended.
- Add 1 cup dressing, salt and pepper then mix well 1 hour before serving.
- Line a platter with lettuce and mound salad on top then garnish with eggs and serve immediately.
