Cheeseburger Soup Meets Potato Soup
Ingredients
- 1 1/2 cups water
- 2 cups potatoes, peeled and cubed
- 2 carrots, grated
- 1 onion, chopped
- 1/4 cup green pepper, chopped
- 1 jalapeno pepper, seeded and finely chopped
- 1 clove garlic, finely chopped
- 1 tbls. beef bouillon granules
- 1/2 tsp. salt
- 1 lb. hamburger, cooked and drained
- 2 1/2 cups milk, divided
- 3 tbls. flour
- 1/2-2/3 lb. velveeta cheese, cubed
- 1/4-1 tsp. cayenne pepper to taste
- 1/2 lb. bacon, cooked and crumbled
- Sour cream and chives to garnish
How to make it
- In saucepan, add first 9 ingredients and bring to boil
- Reduce heat and simmer 15-20 minutes or until potatoes are tender
- Stir in beef and 2 cups milk, then heat through
- In mixing bowl, add flour and remaining milk and stir until smooth
- Gradually stir into soup
- Bring to boil and cook, stirring constantly for 2 minutes or until thick and bubbly
- Reduce heat and stir in cheese until melted
- Add desired amount of cayenne and stir
- Top with bacon just before serving
- Garnish with sour cream and chives
