Green Chili

- 2 lb. pork loin McCormick Grill Mates cinnamon Chipotle Rub 5 cloves of garlic, finely minced shopping list
- 2 small diced onions shopping list
- 2 pasilla peppers shopping list
- 3 anaheim peppers shopping list
- 3 jalapeno peppers shopping list
- 1lb. tomatillos, diced shopping list
- 1 c. Red Stripe beer shopping list
- 1 tbsp. lime juice shopping list
- 32 oz. chicken stock shopping list
- 1 tbsp. cumin shopping list
- 2 tsp. dried oregano shopping list
- 2 tsp. dried chopped bay leaf shopping list
- 1 tsp. rosemary shopping list
- 2 tbs. chicken base shopping list
- 1 jar Herdez salsa verde shopping list
- 2 splashes Cuervo tequila shopping list
- dash of cinnamon shopping list
- pinch of sugar shopping list
- sea salt and pepper, to taste. shopping list
How to make it
- Rub pork loin with cinnamon chipotle seasoning.
- Bbrown on all sides in stock pot.
- Remove from pot.
- Chop pork into small pieces and put back into pot.
- Sautee garlic and onions with pork until transparent.
- Grill peppers until skins are blistered, place in a brown paper sack for about an hour.
- Remove skins and finely dice.
- In a separate pot mix tomatillos, peppers, beer, lime juice and chicken stock. Heat thoroughly.
- Add to garlic and onion mixture in stock pot.
- Add cumin, oregano, bay leaf, rosemary, sea salt and pepper, salsa verde, chicken base, tequila, cinnamon and sugar.
- Simmer for about an hour.
- Serve with lime flavored tortilla chips and shredded queso fresco.
