Monday Night Meatloaf

- 1 1/2 lbs. ground beef (20% fat) shopping list
- 1/2 lb. ground pork (I use ground sausage) shopping list
- 2 eggs shopping list
- 1/2 C milk shopping list
- 1 tsp. onion powder shopping list
- 1/2 tsp celery salt shopping list
- 1/2 tsp ground black pepper shopping list
- 1/2 tsp garlic powder shopping list
- 1 tsp. ground mustard shopping list
- 1 Tbsp worcestershire sauce shopping list
- 1/4 tsp dried thyme,crumbled shopping list
- 1/4 tsp rubbed sage shopping list
- 1 tsp salt shopping list
- 2 medium carrots shredded fine (or process in food processor until they resemble bread crumbs) shopping list
- 1 cup dried bread crumbs (plain or Italian) shopping list
- Sauce: shopping list
- 1/2 C catsup shopping list
- 2 Tbsp honey shopping list
- 1 Tbsp Dijon mustard shopping list
- Pinch cayenne pepper shopping list
How to make it
- Crumble beef and pork in large mixing bowl and set aside.
- In small mixing bowl, combine next 11 ingredients and mix well with a fork so the eggs and milk are thoroughly combined with the spices.
- Add egg mixture to the meat and mix (I use my hands)
- Add the breadcrumbs and carrots and combine all ingredients thorougly.
- Once combined, shape it into a loaf and place in a 9 x 13 inch shallow baking pan. Do not let the meat touch the sides of the pan (this will allow the meatloaf to brown on all sides and let the fat drain)
- Bake at 350 degrees for 60 minutes or until cooked through (165 degrees)
- While meatloaf is cooking, combine ingredients for sauce. During last 15 minutes of cooking, top the meatloaf with the sauce.
- Let rest for 10 minutes before slicing.

I've never met a meatloaf I didn't like! It's my favorite meal, simple as it may be. I usually just throw what I think sounds good that night into a bowl to make it, although I've tried many recipes, too. This one looks fabulous. I like the sausa...more
