Chuck Roast With Heavenly Horseradish Cream

- 1/4 cup vegetable oil shopping list
- 2 tablespoons cider vinegar shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1 tablespoon prepared horseradish shopping list
- 1 teaspoon minced garlic shopping list
- 1 tablespoon finely chopped white onion shopping list
- 1/2 teaspoon dried thyme crushed shopping list
- 1/4 cup chopped fresh parsley shopping list
- 3-1/2 pound chuck roast shopping list
- Cream: shopping list
- 1/2 cup sour cream shopping list
- 1/2 cup mayonnaise shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
- 1 tablespoon prepared horseradish shopping list
- 1 teaspoon fresh lemon juice shopping list
- 1 teaspoon spicy mustard shopping list
- 1/4 cup fresh parsley shopping list
How to make it
- In Dutch oven stir together all marinade ingredients except parsley and roast then stir in parsley.
- Place roast in marinade and turn to coat all sides with marinade.
- Cover and refrigerate overnight then preheat oven to 350 and bake roast in marinade 2 hours.
- Stir together all cream ingredients except parsley then stir in parsley then serve with roast.

I've already made this several times and it tasts a lot like the prime rib we get at our favorite restaurant. We've used the cream in several other dishes and as a dip for other meats. My family has already requested that I make this again.
