Chicken Curry

- 4 chicken thighs shopping list
- 1 16 oz can tomato puree shopping list
- 1 onion, chopped shopping list
- 2 cloves garlic, chopped shopping list
- 2 Tbsp oil, ghee or butter shopping list
- 1/2 tsp garam masala shopping list
- 1/4 tsp cayenne pepper shopping list
- 1/2 tsp salt shopping list
- 1 inch piece of cinnamon shopping list
- 3 whole cloves shopping list
- 3 whole green cardamon seeds shopping list
How to make it
- Heat oil in a skillet until hot. Add onions and garlic, sautee until glassy.
- add the spices and salt and cook stirring often until fragrant.
- Brown the chicken on all sides.
- Add the tomato puree and enough water to cover. Bring to the boil, cover, reduce heat and simmer for 30 minutes.
- Remove the chicken and reduce the sauce till it is thick, about 10 minutes.
- A nice touch is to add about 1/4 cup coconut cream.
- Serve with basmati rice.

I am a vegetarian however the ingredients are fantastic and I love basmati rice and all the rest of it. I may try it over veggies or just rice it is that good...fantastic!!! I love the tastes that I imagine.
