Pineapple Ginger Sauced Tropical Fruit

- 1 fresh pineapple shopping list
- 1 vanilla bean shopping list
- 2 tablespoons granulated sugar shopping list
- 1 teaspoon freshly grated ginger shopping list
- 1 tablespoon crystallized ginger finely chopped shopping list
How to make it
- Skin pineapple and dice reserving 1/4 of the fruit then process in food processor until smooth.
- Strain into a pan then add vanilla bean, sugar and fresh ginger.
- Cook over medium heat until thickened about 8 minutes then remove pineapple sauce from heat.
- Scrape seeds from vanilla bean and stir seeds into sauce and discard pod.
- Combine warm sauce with remaining pineapple and spoon over tropical fruit.
- Sprinkle with crystallized ginger.
