How to make it

  • You will heat EVOO in a pot over medium heat.
  • Next you will saute your onion, the garlic, celery, and the sweet potatoes for around 5 min.
  • You will then add the paprika, turmeric, basil, salt, cinnamon, cayenne, and finally your bay leaf.
  • Stir this and add while stirring your chicken stock and the tamari.
  • You will then cover the pot and let it simmer for at least 15 min.
  • Next, you will add the tomatoes, garbanzo beans, and your green pepper.
  • Let this simmer for abround 10 min, letting the veggies get tender.
  • Add salt and pepper and enjoy!

    the name caught my eye but it seems this soup has the chops (or clucks while we are talking chicken) to back it up. I will be making this soup this week and let you know what I think!

    This soup is not vegetarian. It has chicken stock in it. Chickens are animals not vegetables.

    why is it called gypsy? just curious, looks good, save the chicken broth - switch to vegetable.

    chicken stock... vegetarian? please!
    chickens are animals. chicken is NOT vegetarian. chicken stock is NOT vegetarian.

    but must admit - without that stock it looks interesting.
