Cranberry Spinach Salad with Cranberry Dressing Recipe

Ingredients

How to make it

  • In a large bowl, toss together spinach, craisins, green onions, and mandarin oranges.
  • In blender, combine cranberries, sugar, vinegar, salt, mustard, onion powder, and orange juice.
  • Gradually blend in oil until emulsified.
  • Pour over salad.
  • Sprinkle with almonds

    What a delightful sounding salad. Some people think I'm fruity, I think I'm a nut, and I love salad, so this salad is obviously perfect for me!

    Do you think your mom would mind if I added a clove of garlic to the dressing -- I just love garlic... and this recipe is begging for a clove ;-)

    I love fruit and nuts in salads, so I know I'm gonna like this one - nice vinaigrette, too...thanks for sharing this recipe your mom created - it sounds really good (no wonder it won a ribbon!)...Krum
