Chicken Artichoke And Rice Casserole

- White sauce: shopping list
- 6 tbsp. butter shopping list
- 6 tbsp. all-purpose flour shopping list
- 1/2 tsp. salt shopping list
- 1/4 tsp. pepper shopping list
- 1½ cups chicken broth shopping list
- 1 cup milk shopping list
- Casserole: shopping list
- 1 tbsp. butter shopping list
- 2 cups julienne cut carrots shopping list
- 1/2 cup chopped green bell pepper shopping list
- 1/3 cup chopped green onions shopping list
- 1/2 cup milk shopping list
- 1/4 cup dry sherry shopping list
- 2½ cups cubed cooked chicken shopping list
- 2 slices bacon, cooked until crisp, crumbled shopping list
- 2 cups shredded mozzarella cheese shopping list
- 1½ cups cooked white rice shopping list
- 1½ cups cooked wild rice shopping list
- 1 to 2 (14 oz.) cans artichoke hearts, drained, quartered shopping list
- 1/4 cup grated parmesan cheese shopping list
- 1 to 2 tsp. dried parsley flakes shopping list
How to make it
- In medium saucepan, melt 6 tbsp. butter over medium heat. Stir in flour, salt and pepper. Cook until mixture is smooth and bubbly, stirring constantly. Gradually stir in chicken broth and 1 cup milk. Cook until mixture boils and thickens, stirring constantly.
- Heat oven to 350 degrees. Grease a 13 x 9 - inch baking dish. In large skillet, melt 1 tbsp. butter over medium-high heat. Add carrots, bell pepper and green onions; cook and stir until crisp-tender. Stir in white sauce, 1/2 cup milk, sherry, chicken, bacon and mozzarella cheese; blend well. Remove from heat.
- Combine white and wild rice; spread evenly over bottom of greased baking dish. Arrange artichokes over rice. Spoon chicken mixture evenly over artichokes. Sprinkle with parmesan cheese and parsley flakes; cover tightly with foil.
- Bake at 350 degrees for 40 minutes. Uncover; bake an additional 15 to 20 minutes, or until casserole is thoroughly heated.

This sounds fantastic! I am printing it to try - I hope I have an opportunity soon. I love artichokes and wild rice. With a few differences, this sounds very similar to a casserole I make, so I'm sure I'd love it! Thanks for sharing. - Natalie
