Crustless Ricotta Pie

- 3 eggs - lightly beaten shopping list
- 1 cup ricotta cheese shopping list
- 4 ozs smoked garlic cream cheese - softened shopping list
- 1/3 cup freshly grated parmesan cheese shopping list
- 1/4 tsp black pepper shopping list
- 1 1/2 cups shredded mozzarella cheese shopping list
- 1 jar (14 ozs) marinated artichoke hearts - Drained, reserving the marinade shopping list
- 3/4 cup canned chickpeas, rinsed, drained & coursley chopped shopping list
- 1 can (2 1/2 ozs) black olives - drained shopping list
- 1 jar (2 ozs) pimentoes - drained shopping list
- 1/4 cup chopped fresh parsley shopping list
How to make it
- Pre-heat oven to 350 degrees. Lightly grease a 9 inch pie plate or quiche dish
- In a large bowl, stir together the eggs, ricotta, cream cheese, parmesan & pepper until smooth
- Stir in the mozzarella & 1/4 cup of the artichoke marinade
- Coursely chop the artichoke hearts
- Add to the cheese mixture with the chickpeas, olives, pimentoes & parsley & stir to mix
- Scrape evenly into prepared pie plate
- Bake for 45 mins or until set & golden
- Let stand for 10 mins & then slice into 8 wedges to serve

- NOTE:-
- Other flavors of cream cheese can be used for a variety of flavors.
- To reduce the calories, 4 egg whites can be used in place of the whole eggs & light or reduced fat cheeses can be used.
