Sausage Apple Pecan stuffing

- 2 loafs white bread – cubed ½ inch and toasted light brown shopping list
- 2 large yellow onions– diced shopping list
- 5 stalks of celery trimmed keep leaves – diced shopping list
- 1 red pepper – diced shopping list
- 2 cloves minced garlic shopping list
- 1 orange Pepper - diced shopping list
- 2 pounds ground sausage shopping list
- 2 large Cameo apples (or sweet/tart apples) – diced ¼ inch cubes shopping list
- 2 cups chopped pecans shopping list
- 1/2 pound unsalted butter - melted shopping list
- salt – to taste shopping list
- white pepper – to taste shopping list
- 4 leaves of fresh sage chopped shopping list
- ¼ cup tsp fresh rosemary stems removed shopping list
- ¼ fresh basil chopped shopping list
- 1/8 cup fresh oregano stems removed and chopped shopping list
- 1 Qt fresh turkey stock made from neck bon and giblets shopping list
How to make it
- 1) Brown sausage in skillet and transfer to meat to bowl set aside to cool
- 2) Add onion, celery and peppers to hot sausage oil and sauté till onions are slightly opaque add apples and pecans, garlic and herbs and sauté until onions are browned tossing continuously, remove and add to toasted bread cubes.
- 3) Crumble cooked sausage and add to bread crumbs
- 4) Add melted butter to bread cubes and toss to mix
- 5) Add turkey stock as needed to bread cubes to lightly moisten entire mix tossing and mixing till you can form a nice moisten bread ball in your hand
- 6) Salt and pepper to taste and toss again
- 7) Stuff turkey cavity loosely and with the remaining stuffing transfer to a lightly greased 9 x 13 casserole dish cover with aluminum foil and bake at 350 for 45 min, then uncover and bake for 15 to 20 min more or until golden brown on top
