Easy Couscous with Peas

- 1 onion, diced fine shopping list
- 1 clove garlic, crushed shopping list
- 1 T. olive oil shopping list
- 1 c. frozen peas shopping list
- 1 T. minced fresh parsley shopping list
- salt and pepper shopping list
- 1-1/2 c. vegetable or chicken broth shopping list
- 1 c. couscous shopping list
How to make it
- In a saucepan, sauté the onion and garlic in the oil over medium heat until soft, about 5 minutes. Stir in the peas, parsley, salt, pepper, and broth and bring to a boil. Stir in the couscous, cover, and return to a boil. Remove from the heat and let the mixture sit covered for 5 minutes, or until the liquid is absorbed.
- Fluff with a fork before serving.

This is how I make my couscous but I have never added peas. I don't know why I never thought of adding peas before but I will now ;) Thanks so much for a great idea m11andra!
