Caribbean Chili Beef

- 1 yellow bell pepper cored and quartered shopping list
- 3 large red onions cut in wedges shopping list
- 3 tablespoons corn oil shopping list
- 6 garlic cloves crushed shopping list
- 3 tablespoons flour shopping list
- 1 tablespoon paprika shopping list
- 1 teaspoon salt mixed with 1 tablespoon cracked black pepper shopping list
- 1 tablespoon chopped fresh oregano leaves plus extra for garnish shopping list
- 3 pounds beef cut into 1-1/2” cubes shopping list
- 2 tablespoons brown sugar shopping list
- 1 cup dark rum shopping list
- 3 bay leaves shopping list
- 1/2 teaspoon grated mace or nutmeg shopping list
- 1 tablespoon lime or lemon juice shopping list
- 1 celery stalk finely chopped shopping list
- 2 pounds ripe tomatoes skinned and chopped shopping list
- water or stock shopping list
- 1 large scotch bonnet pepper shopping list
How to make it
- Broil bell pepper skin side up until skin blisters then scrape off and discard blackened skin.
- Dice flesh and set aside then separate onion wedges into petals.
- Heat oil in skillet then add onions and cook until garlic then add garlic and cook 2 minutes more.
- Transfer to a glazed clay pot.
- Mix flour with paprika, salt, pepper and chopped oregano then dust beef with mixture.
- Add beef to skill in batches then sauté until browned then transfer to clay pot.
- Add sugar to skillet and cook until very dark and caramelized.
- Deglaze skillet with rum then simmer until reduced to 2 tablespoons.
- Add bay leaves, mace or nutmeg, citrus juice, celery, tomatoes and broiled pepper.
- Transfer to clay pot then add water or stock to cover then add scotch bonnet.
- Cook at 400 until boiling then reduce to 325 and simmer gently for 3 hours.
