Pineapple Au Gratin

- 1 13.5 oz. can pineapple chunks (reserve juice) shopping list
- 2 T. flour shopping list
- 1 cup sugar shopping list
- 2 eggs shopping list
- pinch of salt shopping list
- 1 8oz. pkg. cream cheese shopping list
- 2 cups miniature marshmallows shopping list
- cheddar cheese, shredded shopping list
How to make it
- Drain pineapple chunks and reserve 3/4 cup juice.
- In a double boiler, combine the juice, flour, sugar, eggs and salt.
- Cook over very low heat until thick.
- In a casserole dish, layer cream cheese, marshmallows and pineapple chunks twice
- Pour sauce over top.
- Finish with a generous layer of shredded cheddar cheese.
- Bake at 350 for 25 minutes or until bubbly hot.
