Cream of Turkey and Wild Rice Soup

- 1Tbs extra virgin olive oil shopping list
- 2c sliced mushrooms(about 4oz) shopping list
- 3/4c chopped celery shopping list
- 3/4c chopped carrots shopping list
- 1/4c chopped shallots shopping list
- 1/4c all purpose flour shopping list
- 1/4tsp salt shopping list
- 1/4tsp fresh ground pepper shopping list
- 4c chicken broth(reduced-sodium) shopping list
- 1c quick cooking or instant wild rice shopping list
- 3c shreaded cooked turkey or chicken(12 oz) shopping list
- 1/2c reduced-fat sour cream shopping list
- 2Tbs chopped fresh parsley shopping list
How to make it
- Heat oil in a large saucepan over medium heat. Add mushrooms,celery,carrots and shallots and cook,stirring,until softened,about 5 mins. Add flour,salt and pepper and cook,stirring for 2 mins more.
- Add broth and bring to a boil,scraping up any browned bits. Add rice and reduce heat to a simmer. cover and cook until the rice is tender,5 to 7 mins. stir in turkey(or chicken),sour cream and parsley and cook until heated through,about 2 mins more.
