How to make it

  • Toss berries, sugar, lemon juice, allspice, nutmeg, and tapioca (If you are making a lattice crust reserve 1/4 of mixture before adding tapioca).
  • Let sit 15 minutes.
  • Heat oven to 350ºF.
  • Roll out dough for bottom crust. Add fruit mixture, if doing a lattice crust add reserve fruit (without the tapioca) on top.
  • Roll out top crust. It is not necessary to make slits, but you can if you like.
  • Bake for 1 hour, rotating after 30 minutes if necessary.
  • Pie should be bubbling when you remove it from the oven.
  • Cool at least one hour, serve.

    Many recipes call for too much fruit. The pie should be slightly convex when you put it in the oven. Don't try and force all the berries into the the pie, if they don't fit don't worry.

    Taste the berries and reduce the sugar to 3/4 cup or less if they are very sweet.

    4 tablespoons of tapioca will cause the pie to set up very firm, no juices. If you like a juicy pie, use less.
