Western Black Bean Soup

- 1 cup dried black beans shopping list
- 4 cups water shopping list
- 4 slices bacon, diced shopping list
- 1/2 cup chopped onion shopping list
- 1/2 cup chopped celery shopping list
- 1 clove garlic, minced or pressed shopping list
- 1 tsp. cumin shopping list
- salt to taste shopping list
- 1 Tbsp. red wine vinegar shopping list
- 2 hard-cooked eggs, chopped shopping list
- parsley sprig shopping list
- lemon slices shopping list
- freshly cracked black pepper shopping list
How to make it
- Wash beans. Cover with the water. Bring to a boil. Simmer,covered, for 2 min. Remove from heat. Let stand I hr.
- Fry bacon. Reserve half for the garnish. In 2 Tbsp. of the bacon fat,
- saute onion, celery and garlic. Add vegetables to soaking beans. Season with cumin.
- Cover and simmer for 2 hrs. or until beans are tender. (Make sure
- beans are always covered with water.)
- Puree beans in a food mill or processor. Thin with the broth until
- consistency is to your liking. Heat until steamy. Stir in salt and vinegar.
- Serve in bowls. Garnish with reserved bacon pieces, chopped
- eggs, parsley and lemon slices.
- Sprinkle with black pepper
