How to make it

  • Combine rub ingredients and rub over ribs then preheat oven to 350.
  • Heat oil in a large deep oven proof skillet over medium high heat.
  • Add ribs and brown them on all sides then remove meat and set aside.
  • For sauce pour all but 2 tablespoons fat from pan then add onions, celery, garlic and fennel.
  • Cover and cook five minutes until vegetables begin to soften stirring occasionally.
  • Add wine and stir scraping up brown bits from bottom of pan.
  • Bring to boil then add tomatoes, stock and fennel tops.
  • Add ribs to pan then cover and bake 2 hours.
  • If sauce is too liquid remove meat and keep warm.
  • Skim fat from sauce and reduce by boiling for 15 minutes.
  • Cook noodles just until done then drain and put on platter and top with ragout and parmesan.
