Chili Beef in Spanish Rice Ring

- 2 pounds boneless beef cut in 1” cubes shopping list
- 1/4 cup flour shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon chili powder shopping list
- 3 tablespoons shortening shopping list
- 1 cup water shopping list
- 1/4 cup chopped white onion shopping list
- 1/4 cup chopped green pepper shopping list
- 1-1/2 tablespoons butter shopping list
- 1/2 teaspoon chili powder shopping list
- 1/4 teaspoon salt shopping list
- 1 cup water shopping list
- 1 cup tomato juice shopping list
- 1-2/3 cups instant rice shopping list
- 10 ounce package frozen peas shopping list
How to make it
- Combine flour, 1 teaspoon salt and 1 teaspoon chili powder.
- Dredge beef cubes in seasoned flour and brown in shortening.
- Pour off drippings and add 1 cup water then cover tightly and cook slowly for 2-1/2 hours.
- After beef has cooked 2 hours prepare rice ring.
- Cook onion and green pepper in butter.
- Add 1/2 teaspoon chili powder, 1/4-teaspoon salt, 1 cup water and tomato juice.
- Bring to a boil then add rice and cover tightly.
- Remove pan from heat and let stand 7 minutes.
- Cook peas according to package directions then drain and add to cooked rice mixing lightly.
- Pack peas and rice mixture in a greased ring mold then let stand 2 minutes or so.
- Unmold ring onto a heated platter and fill with chili beef cubes.
- Thicken cooking liquid with flour for gravy.

I'm always looking for dishes that call themselves "Spanish Rice". I have an elusive idea since childhood of a dish called "Spanish Rice" that I can never find or duplicate the flavor as I remember it.
