How to make it

  • Heat chicken broth, water and corn to near boiling.
  • Add rice and chicken, stir, cover and simmer on low heat for 20 minutes.
  • Stir and season to taste with salt, curry, ginger, garlic or whatever.

    I'm roasting a chicken tonight and am going to tell my husband he has to leave at least ONE chicken broth can's worth of chicken so I can make this. Thanks for posting. Gonna save some money!

    It is also a way to save some money on chicken - you can buy a great big bunch of chicken on sale, cook it, dice it, freeze it in small ziplok sandwich bags and have it ready to go.

    It is really dependant on the spices you use. Experiment and see what you can come up with - I have been using teriaki suace, or soya sauce and sometimes curry lately.

    We have a product in the US called "Minute Rice" that actually takes five minutes instead of 20 to cook.

    I've got some packs of microwavable rice that I added in at the last minute when made this, and it didn't taste too bad!

    I'm not sure if its available in the US, but in the UK we've got a brand called Veetee dine in rice (www.veeteedinein.com) and its quite good.

    I usually use pre-cooked chicken - often I cook a couple of chickens, eat some, chop up a bunch and freeze it, and boil the carcasses for soup.

    That way I have lots of diced pre-cooked chicken, turkey, sausage, etc. ready to go into what ever I am making.
