Weeknight Coq au Vin

- 2 bacon slices,chopped shopping list
- 4(4oz) bone-in chicken thighs,skinned shopping list
- 4(4oz) chicken drumsticks,skinned shopping list
- 1/2tsp salt shopping list
- 1/2tsp pepper shopping list
- 1/4c finely chopped,fresh,flat-leaf parsley,divided shopping list
- 11/2c cremini mushrooms shopping list
- 11/2c dry red wine shopping list
- 1c chopped carrots shopping list
- 1/2c shallots shopping list
- 1/2c chicken broth shopping list
- 1Tbs brandy shopping list
- 1tsp minced fresh thyme shopping list
- 2tsp tomato paste shopping list
- 1 garlic clove,minced shopping list
How to make it
- Cook bacon in large dutch oven over med-high heat for 2 mins. Sprinkle chicken with salt and pepper. Add chicken to the pan;cook 2 mins. Stir in 3Tbs parsley,mushrooms,and remaining ingredientsbring to boil. Cover,reduce heat, and simer 25 mins or till chicken is done.
- Remove chicken with slotted spoon;keep warm. Bring cooking liquid to a boil;,cook till reduced to 3 cups(about 6 mins). Return chicken to pan;cook 1 min or till thoroughly heated. Sprinle with remaining 1 Tbs. parsley.
