Baked Ham and Spinach Au Gratin

- 3 tablespoons butter shopping list
- 1 cup frozen chopped onions thawed and drained shopping list
- 3 garlic cloves minced shopping list
- 3 tablespoons all purpose flour shopping list
- 1-1/2 teaspoons dry mustard shopping list
- 2 cups milk shopping list
- 1 cup shredded swiss cheese shopping list
- 10 ounces frozen chopped spinach thawed and drained shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 20 ounces refrigerated shredded potatoes shopping list
- 1 pound baked or boiled ham cut into cubes shopping list
How to make it
- Preheat oven to 375.
- Melt butter in a medium saucepan over moderate heat.
- Add onions and sauté stirring occasionally for 3 minutes.
- Add garlic and sauté stirring occasionally for 3 minutes more.
- Blend in the flour and mustard then gradually whisk in the milk.
- Cook stirring constantly until thickened and smooth.
- Add cheese and stir until melted.
- Remove from heat and mix in the spinach and pepper.
- Arrange half the potatoes in a lightly greased baking dish then pour on half the spinach mixture and scatter ham on top.
- Top with the remaining potatoes and spinach mixture.
- Cover with foil and set on a baking sheet then bake for 30 minutes.
- Remove foil and bake 15 minutes longer.
