White Chocolate Chunk Muffins

- 2 1/2 all-purpose flour shopping list
- 1 cup packed brown sugar shopping list
- 1/3 cup unsweetened cocoa powder shopping list
- 2 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 1 1/3 cups buttermilk shopping list
- 6 tblspn butter or margarine - melted shopping list
- 2 eggs - beaten shopping list
- 1 1/2 tsp vanilla shopping list
- 1 1/2 cups white baking chocolate - chopped into small chunks shopping list
How to make it
- Pre-heat oven to 400 degrees F
- Grease 12 (3 1/2") muffin cups - set aside
- In a large bowl combine flour, sugar, cocoa, baking soda & salt
- In a small bowl, combine buttermilk, melted butter, eggs & vanilla until blended
- Stir into flour mixture just until moistened
- Fold in white chocolate
- Spoon into prepared muffin cups, filling 1/2 full
- Bake 25 - 30 mins or until a toothpick inserted in the center comes out clean.
- Cool in pan on wire rack for 5 mins
- Remove muffins from pan & cool completely on wire rack
