How to make it

  • Heat oil and sauté garlic and spinach three minutes then combine with potatoes and cheese.
  • Season with salt and pepper.
  • Blot trout dry and sprinkle cavities with salt and pepper.
  • Preheat oven to 400 then oil a baking dish and sprinkle with shallots.
  • Fill trout with stuffing mixture and place side by side on baking dish and sprinkle with wine.
  • Cover with parchment or foil then bake 15 minutes.
  • Uncover and dot with butter and bake 5 minutes longer.
