Trout Stuffed With Potatoes and Spinach Stuffing

- 2 tablespoons vegetable oil shopping list
- 1 clove garlic minced shopping list
- 1/2 pound spinach chopped shopping list
- 4 medium red potatoes diced and cooked 10 minutes shopping list
- 1 cup red wine shopping list
- 2 tablespoons grated parmesan cheese shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 4 fresh trout cleaned shopping list
How to make it
- Heat oil and sauté garlic and spinach three minutes then combine with potatoes and cheese.
- Season with salt and pepper.
- Blot trout dry and sprinkle cavities with salt and pepper.
- Preheat oven to 400 then oil a baking dish and sprinkle with shallots.
- Fill trout with stuffing mixture and place side by side on baking dish and sprinkle with wine.
- Cover with parchment or foil then bake 15 minutes.
- Uncover and dot with butter and bake 5 minutes longer.
