Tuna With Tomato Cilantro Linguine

- 2 tablespoons olive oil shopping list
- 1-1/2 tablespoons fresh lime juice shopping list
- 1 tablespoon drained capers shopping list
- 4 small roma tomatoes seeded and chopped shopping list
- 2 garlic cloves minced shopping list
- 1/4 teaspoon cayenne pepper shopping list
- 1/3 cup fresh cilantro leaves shopping list
- 4 tuna steaks shopping list
- 1/4 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- olive oil or cooking spray shopping list
- 10 ounces fresh linguine shopping list
How to make it
- In large bowl stir together oil, lime juice, capers, tomatoes, garlic, red pepper and cilantro.
- Set aside.
- Remove and discard any skin from fish then rinse and pat dry.
- Cut fish into 4 serving pieces then season with salt and pepper.
- Spray wide nonstick frying pan with cooking spray and place over medium high heat.
- Add fish and cook turning once for 8 minutes.
- Meanwhile in a 6 quart pan cook linguine in 3 quarts boiling water for 2 minutes then drain well.
- Set 2 tablespoons tomato mixture aside then lightly mix remaining mixture with hot pasta.
- Divide pasta among 4 warm plates and top each serving with a piece of fish.
- Top fish evenly with reserved tomato mixture.
