Ingredients
- 600g Fillet of beef shopping list
- 20ml worcestershire sauce shopping list
- 3-4 cloves garlic, crushed shopping list
- 2ml dried thyme, crushed between the fingers shopping list
- 30ml sunflower oil shopping list
- 250g brown mushrooms, wiped and thinly sliced shopping list
- 1 large bunch of spring onions, chopped shopping list
- 500ml low-fat milk shopping list
- 30ml tomato paste shopping list
- 25ml soy sauce shopping list
- pinch of salt and sugar shopping list
- 20ml cornflour shopping list
- 50ml medium dry sherry shopping list
How to make it
- Slice beef across the grain into wafer-thin strips, measuring about 6cm x 1cm (this is most easily done if the beef is semi-frozen)
- Place beef strips in a large, shallow dish, add Worcestershire sauce, garlic and thyme, toss to mix, then cover loosely and stand for 45 minutes. (I like to add a Tablespoon -15ml- of coarse black pepper in the 'mix')
- Heat oil in a large frying pan and stir-fry steak briefly, until just browned, tossing all the time.
- Add mushrooms and onions and keep tossing, over medium heat until softening.
- Turn heat very low and add milk, tomato paste, soy sauce, salt and sugar. Stir to mix, then cover and simmer very gently for 4-5 minutes.
- Just before serving, mix the cornflour with the sherry, stir into pan and allow to boil up, stirring until sauce has smoothed out and thickened.
- Serve with rice or ribbon noodles and a crisp green salad.
