Basil Artichoke Chicken

- 6 boneless, skinless chicken pieces (thighs and breasts) shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon paprika shopping list
- 1 teaspoon cayenne shopping list
- 2 Tablespoons olive oil shopping list
- 3 Tablespoons white balsamic vinegar shopping list
- 2 cloves minced garlic shopping list
- 2 leeks, thinly sliced (except tough green leaves) shopping list
- 8 ounces frozen artichoke hearts shopping list
- 1 1/2 cup white wine (or chicken broth) shopping list
- 1 cup minced parsley shopping list
- 1/4 cup minced fresh basil shopping list
- 3 roma tomatoes, diced shopping list
How to make it
- Season chicken pieces with salt, paprika, and cayenne.
- In a large skillet over medium high heat, brown chicken on both sides in olive oil.
- Remove chicken pieces from skillet to crock pot.
- Add balsamic vinegar, garlic, and leeks to skillet and stir together for 1 minute, then stir in artichoke hearts and white wine.
- Pour skillet ingredients over chicken in crock pot, cover and cook on low for 4-5 hours.
- Stir in parsley, basil, and tomatoes.
- Continue cooking for an additional hour.
- Serve Basil and Artichoke Chicken over prepared rice.
