Mushroom and bok choy noodle soup

- 2 litres chicken stock shopping list
- 1/4 cup oyster sauce shopping list
- 1 small red chilli, deseeded and finely chopped shopping list
- 200g swiss brown or portabello mushrooms, thickly sliced shopping list
- 1 bunch bok choy (or any other asian green), cut into biggish pieces shopping list
- 300g firm tofu, cut into cubes shopping list
- 600g fresh udon noodles shopping list
- 2 spring onions (schallots) sliced on the diagonal, to serve shopping list
How to make it
- Combine stock, oyster sauce and chilli in a big saucepan and bring to the boil, covered.
- Prepare noodles as per packet instructions.
- Add shrooms, cover and cook for 1 minute, add bok choy, cook for 1-2 minutes, till its bright green.
- Stir in tofu.
- Divide noodles amoung serving bowls and ladle soup over. Sprinkle spring onions on top.
- Now eat it with chopsticks if you wanna be REALLY authentic.
