How to make it

  • In Cuisinart, chop the tomatoes, put in a bowl.
  • Then chop the green pepper, celery & scallions.
  • Shred the carrot.
  • Hand-chop some fresh cilantro, making finely chopped about 1/3 cup.
  • (ok to use some of the stems,,)
  • Combine the vegetables all in one bowl.
  • In a separate bowl, combine the tomato paste, green chilies, vinegar, lime juice, garlic, olive oil, sugar, salt, pepper, oregano and Tabasco.
  • Mix all together well.
  • Chill well and serve with the extra bottle of green Tabasco for those who may like a sprinkle of more "heat".
