How to make it

  • For yogurt: if using plain American yogurt, you must strain it. Place a double-layer of paper towels over a tupperware bowl with a rim, and secure with rubber bands, leaving a little slack in the center. Pour yogurt onto the towels, cover and place in fridge until needed, and at least 1 hour. Discard liquids, and proceed with recipe. If using Greek yogurt, skip this step.
  • Place yogurt, garlic, lemon juice and feta in a small food processor. Process until smooth, streaming in oil as you do. Transfer to small bowl, stir in chopped herbs. Taste and season, serve.
  • *Roasted Garlic
  • Heat oven to 400. Place the cloves (peeled or unpeeled) from a whole head of garlic in a layer of heavy-duty aluminum foil and make a tightly sealed pouch. Bake about 25-30 minutes, until garlic is golden yellow, soft, and sweet. Has a million uses.
