How to make it

  • Preheat oven to 350°F.
  • Cut chicken breasts into 1-inch cubes.
  • Cut each bacon slice into thirds.
  • Wrap each chicken cube with bacon and secure with a wooden pick inserted on the diagonal starting where bacon seam overlaps.
  • Stir together brown sugar and chili powder.
  • Dredge wrapped chicken in mixture.
  • Coat a rack and broiler pan with non-stick cooking spray.
  • Place chicken on rack in broiler pan.
  • Bake at 350°F for 30 to 35 minutes, or until bacon is crisp.

    This is funny! I was just making up a recipe in my head last night that I wanted to try for a party tomorrow. It is similar to this, but with a few small differences. I would cut the chicken into strips(thin) and coat the chicken in what I call my Bayou Spice recipe Which is brown sugar, white pepper, chili powder, garlic powder, onion powder, and creole spices. I was going to season the chicken and let it sit. Next I planned to sprinkle the bacon with brown sugar. Cut the bacon into thirds,Then wrap the bacon around the chicken on skewers, (like your recipe) I would then lay the chicken/bacon on wax paper and bake it. I was going to make a sauce with butter, brown sugar, mustard and Bourbon. After the chicken was cooked I would then brush the sauce over and return to oven for a few minutes. Lastly, I had planned on pouring the remaining sauce over and serving these with pretzel sticks. I can't believe how similar! Funny! Thanks for posting this!
