Chicken And Peppers

- 1/2 lb chicken breast, thinly sliced on the bias shopping list
- 3 bell peppers, mixed colors, thinly sliced shopping list
- 8 oz bamboo shoot slices shopping list
- 3 spring onions, sliced shopping list
- 2 garlic cloves, sliced shopping list
- 2 tsp ginger root, chopped very finely shopping list
- 3 dried chillis (you can leave them whole or for a more intense heat, chop them in small pieces) shopping list
- Marinade: shopping list
- 1 Tbsp rice wine or dry sherry shopping list
- 1/2 Tbsp light soy sauce) shopping list
- 1 tsp cornstarch shopping list
- pinch of salt shopping list
- Sauce: shopping list
- 3 Tbsp light soy sauce (I like Pearl River Bridge) shopping list
- 1 Tbsp cider vinegar shopping list
- 1 tsp sugar shopping list
- To thicken: shopping list
- 1/2 Tbsp cornstarch shopping list
- 1 Tbsp water shopping list
- 1/2 Tbsp sesame oil shopping list
How to make it
- Add chicken to marinade ingredients and set aside for 20 minutes.
- Mix together the sauce ingredients in a small bowl. Mix the cornstarch with the water and set aside.
- Heat a wok or frying pan and add 2 Tbsp peanut oil. When hot, add the chillis, onion, ginger, garlic and chicken and cook until the color changes. Remove from wok and set aside
- Add another tbsp oil to the pan and add the peppers and bamboo shoots. Cook for a few minutes.
- Add the chicken and the sauce ingredients back to the pan. Stir a couple of minutes then add the cornstarch mixture. Stir until it thickens.
- Turn off the heat and add the sesame oil and mix thoroughly.
- Serve with white rice.

This is actually one of my favorite Chinese dishes. I make this with several different sauces and sometimes add fried tofu to it.
