How to make it

  • Add chicken to marinade ingredients and set aside for 20 minutes.
  • Mix together the sauce ingredients in a small bowl. Mix the cornstarch with the water and set aside.
  • Heat a wok or frying pan and add 2 Tbsp peanut oil. When hot, add the chillis, onion, ginger, garlic and chicken and cook until the color changes. Remove from wok and set aside
  • Add another tbsp oil to the pan and add the peppers and bamboo shoots. Cook for a few minutes.
  • Add the chicken and the sauce ingredients back to the pan. Stir a couple of minutes then add the cornstarch mixture. Stir until it thickens.
  • Turn off the heat and add the sesame oil and mix thoroughly.
  • Serve with white rice.
