Spanish Noodle Bake

- 1 large chicken or breast halves, boiled and deboned shopping list
- 8 oz package wide noodles, cooked in chicken broth until tender shopping list
- 1 stick butter shopping list
- 1 cup chopped celery shopping list
- 1 cup chopped green onion, (all of green onions) shopping list
- 1 cup chopped mushrooms shopping list
- 1 cup chopped bell pepper shopping list
- 1/2 pound Velveeta cheese, cubed shopping list
- 1 can cream of mushroom soup shopping list
- 1 can Rotel tomatoes, diced shopping list
- 1/2 cup chopped pimento olives shopping list
How to make it
- Cook and debone chicken.
- Cook noodles or pasta in chicken broth, saving one cup.
- In butter saute the veggies until tender.
- Add to the sauted veggies the cheese, soup, rotel and pimentoes.
- Drain noodles of all but 1 cup of broth.
- Mix all together and pour into large baking dish.
- Cover and bake for 35 or 40 minutes or until bubbly at 350 degrees.
- This makes a very large dish.
