Tomato Basil Pasta Salad

- 1 pound pasta, your choice in shape - I like small shells, cooked in well salted water, drained shopping list
- 4 cups tomatoes, diced into a size to match the size of cooked pasta, drained shopping list
- 1/2 cup fresh basil, leaves only, sliced into a chiffonade shopping list
- 1/2 small red onion, the half cut lengthwise in thirds, then sliced thinly shopping list
- 1 small garlic clove, minced shopping list
- 4 ounces feta cheese, crumbled shopping list
- 2 tablespoons extra virgin olive oil, or more to taste shopping list
- 2 tablespoons balsamic vinegar, or more to taste shopping list
- 2 tablespoons Jane's Crazy Salt, or more to taste shopping list
- freshly ground black pepper, to taste shopping list
How to make it
- In large mixing bowl, toss pasta, tomatoes, basil, onion, garlic, and feta. Drizzle olive oil and vinegar over and season with Crazy Salt and pepper. Mix, taste, and adjust seasonings if necessary. Add more tomatoes or more basil if you think it needs it.
- NOTE: Use gluten-free pasta to make this gf.
