Dilled Potato Apple Salad

- 4 small red potatoes shopping list
- 2 cups plus 1 teaspoon water divided shopping list
- 1/2 cup diagonal cut snow peas shopping list
- 1/2 cup chopped celery shopping list
- 2 tablespoons thinly sliced green onions shopping list
- 1 medium unpeeled red apple cut into thin slices shopping list
- 3 tablespoons white wine vinegar shopping list
- 1 tablespoon vegetable oil shopping list
- 1 teaspoon dill weed shopping list
- 1/2 teaspoon sugar shopping list
How to make it
- Combine potatoes and 2 cups water in a medium sauce pain and bring to a boil.
- Cover saucepan then reduce heat and simmer 15 minutes.
- Drain and allow to cool. Then peel and cut into 1/4" slices and set aside.
- Cook peas in small amount of boiling water 15 seconds then drain and rinse under cold water.
- Combine potatoes peas, celery, green onions and apple slices and toss well.
- Combine remaining water, vinegar, oil, dill weed, sugar and a dash of salt.
- Add to potato mixture tossing gently to coat then cover and chill 1 hour.
