Beet And Walnut Salad

- 1/2c chopped walnuts shopping list
- 1heat romaine,chopped shopping list
- 1 can(14 oz)sliced beets,drained and chopped shopping list
- 4 radishes,chopped shopping list
- 1/2 small red onion,chopped shopping list
- 2 ribs celery,chopped shopping list
- 2 Tbs. black cherry,seedless raspberry or apricot preserves shopping list
- 2 Tbs vinegar shopping list
- 1 tsp poppy seeds,optional shopping list
- 3Tbs extra-virgin olive oil shopping list
- salt and pepper shopping list
How to make it
- Toast nuts in a small pan over medium heat,3-4 minutes,then let cool
- Combine choped lettuce,beets,radishes,onion,celery and toasted walnuts in a shallow bowl. Place the preserves into a small bowl and whisk vinegarinto it. Add poppy seeds to dressing if you are using them. Whisk extra-virgin olive oil into the dressing and season with salt and pepper. Dress salad and toss to coat evenly then adjust salt and pepper to taste.
