How to make it

  • Par boil peppers in salted water for 5 minutes. Drain.
  • Brown meat, onions and seasonings. Drain.
  • Mix rice, meat mixture and spaghetti sauce together
  • Place peppers in 13"x 9" baking pan and fill with mixture, placing extra around peppers.
  • Cover with foil and bake 45 minutes at 350
  • Remove foil and continue to bake for 15 minutes
  • Top with sliced american cheese or grated parmesan.

    the only time I ever had stuffed peppers was thanks to Deb, my stepmom. I've always been intimidated to try b/c any attempts at meatloaf has been disasterous & the stuffing is alot like meatloaf. I got some beautiful green peppers from the farmer's market & am ready to take a step out into the unknown.....

    I just found this recipe and would like to add that there are shortcuts to this recipe. I fix everything fresh. I don't parboil the peppers, I use red and yellow and orange peppers, I do not cook the ground chuck or the brown rice. I do use fresh herbs, spices, and tomatoes. Also spaghetti sauce.
