How to make it

  • Place a sheet of aluminum foil inside a black iron skillet with edges extending upward slightly
  • Place roast in skillet on top of foil
  • Place pats of butter over roast to cover
  • Sprinkle with black pepper
  • Sprinkle generously with Worcestershire Sauce
  • Place in a 350 oven
  • Baste occasionally with the juices
  • Cook until desired doneness
  • Remove from oven and let set a few minutes before slicing
  • Slice *thinly* to serve
  • When there are leftovers, I slice thinly, and sizzle in a black skillet in more butter and Worcestershire
  • This is truly delicious. Great in wraps also.
  • For a sandwich dip, extra butter and Worcestershire Sauce can be cooked separately and cooked down for a little while
  • Make sandwiches on hearty crusty bread, serve some of this sauce in a separate bowl and dip away! :)

Thanks for this recipe, Rosemary! I have two sirloin tip roasts in my fridge. I had no idea what I was going to do with them until I saw your recipe this morning. Your recipe sounds just right and I'm going to make my roasts your way to night for my family. Thanks again for the recipe!

I don't have a cast iron skillet, so I did it in a crock pot. Yummy! Thanks for the recipe.

Mahvelous dahling. I usually throw it in the crockpot (cause I'm lazy), but I know your're recipes rock, so I'll do it your way.
