Easy Chicken Bake With Salsa And Crispy Polenta

- 2 T olive oil shopping list
- 2-3 pounds chicken thighs or pieces, skinned shopping list
- 1.5-2 cups fresh salsa shopping list
- 1 can rinsed black beans shopping list
- 1 cup dry polenta (enough to cover bottom of pan about 1/8 an inch deep) shopping list
- 1 T italian seasonings shopping list
- 3/4 T salt shopping list
- 1 T garlic powder shopping list
- 1/8 water or broth (just enough to wet the polenta) shopping list
How to make it
- Preheat oven to 375
- Remove skins from chicken (optional)
- Season chicken with spices and salt to taste
- Add oil to large sautée pan and fry chicken over high heat, about 4-6 minutes each side until browned
- Spray a 13 x 9 baking pan with Pam or grease lightly
- Pour dry polenta in pan and top with rinsed beans
- Add the water to the pan
- Place chicken on polenta/beans mixture
- Top chicken with salsa
- Bake for about 50 minutes, covered works, but uncovered is fine.
