Dried Tomatoe Burgers

- 2 pounds lean ground beef shopping list
- 2 tablespoons finely chopped, drained, oil-packed dried tomatoes shopping list
- 2 teaspoons finely shredded lemon or lime peel shopping list
- 1 teaspoon salt shopping list
- 1/2 teaspoon pepper shopping list
- 1/2 cup light mayonnaise dressing or salad dressing shopping list
- 1/4 cup snipped fresh basil shopping list
- 2 jalapeno peppers, seeded and finely chopped shopping list
- 8 onion hamburger buns shopping list
- 2 cups lightly packed arugula or spinach leaves shopping list
How to make it
- Combine beef, tomatoes, lemon or lime peel, salt, and pepper in a medium bowl; mix lightly but thoroughly.
- Shape into eight 1/2-inch-thick patties. Grill patties on the rack of an uncovered grill directly over medium heat for 14 to 18 minutes
- Meanwhile, combine the light mayonnaise or salad dressing, basil, and jalapeno peppers in a small bowl; mix well.
- During the last 1 to 2 minutes of grilling, place buns, cut sides down, on grill rack to toast. Place burgers on bottom halves of buns. Top with the mayonnaise dressing mixture and spinach.
- Add the bun tops.
